Culinary Tuesday- A feast from the Middle East!!!


Hello all!!
This recipe is one of my easy on the go midweek recipes great with a cheese platter on the side and perfect for a casual gathering.
SHAK-SHU-KA
Is a mixture of fresh red and gorg bell peppers, jalapenos, diced tomatoes, onion and a few cloves of garlic sautéed to perfection…topped with a slices of goat cheese a tapenade on the side and some crusty bread and "your in tomato heaven!!!!"
 bed bath and beyond sells these gorgeous colorful small pans that are perfect for each guest...
How?
Prep: chop 3 tomatoes, 1 onion, 1 jalapeño and 1 red bell pepper
Sautee the onion in the pan until transparent
Add 1 clove of chopped garlic
Add tomatoes
And bell peppers
Sautee a few minutes
Add two tbl spoons of tomato paste and 1 cup of water
For seasoning add salt, pepper, and a pinch of red paprika
Let it cook for about 20 min on low,
Add two eggs, (sunny up style) and top with a nice slice of goat cheese or feta
Add some water and cover until
The eggs are ready.
